Inspirational Chef: My professional chef icons are Peter Gilmore and Rasmus Kofoed. I am so inspired by the pioneering work of them due to their nature friendly food compositions.

Favorite Dish to Prepare: I don’t really have a preference among the plates to prepare, I love all of them just a bit more the meats and sauces.

Name: Loi Ming Ai

Position: Competitor

Chef Ming Ai started his career at the tender age of 20 in 2009, and has since worked in various places around the world, learning their culture and gaining first hand experience.

In 2013, he decided to learn the proper techniques of pastry making at Academy of Pastry Arts Malaysia where he was chosen by the chefs to participate in his first competition to represent the school in a live competition hosted by Food & Hotel Malaysia where he won his first Gold Medal. 

He then took on a bigger role in the competition world and trained as the National team assistant for “Mondial des Arts Sucre” competition held in France, while still studying at the Academy of Pastry Arts Malaysia.

After graduation from the academy, he joined Malaysia’s National team as a youth Chef to represent Malaysia in the Food & Hotel Asia competition in Singapore and brought home a Bronze Medal. 

He has also won a Silver Medal with his chocolate show piece category in the “I’m Chef competition” held inShanghai in 2016. 

It was no easy task for Chef Ming Ai to be where he is today, but it is because of all the hard work and perseverance and dedication that he has put into his career that has made him to be the great Chef that he is today.

Favorite Dish to Prepare: It's more about the occasions of the dish than the dish itself. I like to bring desserts and cakes to dinner and special celebrations with my friends .

Born in Taiwan, I have attended Secondary Education prior to attending my current Bachelor Degree in Culinary Pastry Arts at Hung Kuang University, Taichung Dedicated to fine Pastry Arts, I developed my interest in early years as to develop and refine my creativity and skills. I have taken part in various smaller culinary competition as to strengthen my competency skills ability to enhance competition time managements, refined trade specific skills and to compare and share current trends and knowledge.
Through motivation and encouragements from close friends, I have participated in 2017 at the TUCC Thailand Regional Global Pastry Chef Challenge Competition and have secured my nomination to represent Taiwan in the upcoming Global Chefs Challenge Pastry finals in Kuala Lumpur, Malaysia in 2018.
I sincerely thank my mentors at the University, as well as my close friends at the Taiwan Chef Association and to my family for giving me this opportunity and encouragement to strive for further enhancing my skills ability. I will continue to do my best and try my best to win the global competition.
